We are a high-volume, premium French dining establishment celebrated for our vibrant atmosphere and exceptional French culinary execution. Celebrated for our artisanal desserts, exceptional pastries, and high-quality presentation. We are seeking a creative and highly skilled Pastry Chef to take ownership of our pastry department, elevate our dessert menus, and lead a dedicated sweet-section team.

Key responsibilities

  • Menu Creation: Design and execute innovative pastry, dessert, and bakery menus that align with current international culinary trends and seasonal local fruits.
  • Production Management: Oversee the daily preparation and production of all pastries, cakes, breads, and desserts, ensuring strict quality and portion controls.
  • Plating & Presentation: Maintain meticulous standards of aesthetics and presentation for all sweet items leaving the pastry section.
  • Inventory & Costing: Manage stock levels of specialty pastry ingredients (e.g., chocolates, flours, dairy), minimize waste, and maintain budget targets.
  • Hygiene Standards: Ensure the pastry kitchen complies with strict HACCP regulations, food safety protocols, and temperature-controlled storage requirements.

Requirements

  • Minimum 2–3 years of experience as a Pastry Chef, Pastry Sous Chef, or senior Pastry Chef de Partie in a high-end restaurant, luxury resort, or artisan patisserie.
  • Advanced technical expertise in baking, chocolate work, sugar work, and modern plated dessert techniques.
  • Creative flair with a strong eye for detail, color, and contemporary food styling.
  • Good communication skills in English to collaborate with the Executive Chef and brief the front-of-house service staff.
  • Strong leadership skills to train and mentor junior pastry commis and helpers.
